Recipes from Chef Christopher's Farm Dinner ~ Help Wanted ~ 4/4/15 Veggie List

Tonopah Rob's Vegetable Farm is seeking a few good people to help clean veggies, pull weeds, harvest produce from the fields and manage the aquaponic greenhouse.

Positions available:

Two volunteers to sit under the hub and clean veggies.  Run the salad spinner and salad bowl.
Very easy to do and this position is paid by fresh veggies and eggs.

Managing position to learn, run, harvest veggies and grow the aquaponic greenhouse and part-time farm work.  Monthly salary will be determined by experience.

Field hands or volunteers needed to help harvest/pick veggies from the fields, learn irrigation, tractor operation and other major and minor farm tasks.  Pay depends upon experience.

All positions require non tobacco/drugs.  Must have an Arizona driver's license or a driver's permit.  A mandatory business exam must be passed scoring a 90% or higher to be accepted for the positions.

All people must be at least 15 years of age.  Must also be honest, hard-working and take pride in your work.  We work smart not hard, well, we work hard but are smart about our work.  Please, the farm needs help or crops will rot in the fields and that means less food for the tables.  If you are available please call 623 386 3033 or email Rob at tonopahrob@gmail.com .

Pictured here are zinnias. They are extremely good for the farm by attracting many different beneficial insects both pollinators and carnivores. 

After nearly a year in progress, the greenhouse water system is complete and the next step is to pull the plastic over the hoop house.  Rob needs a few volunteers to help pull the plastic and secure it with wriggle wire.  After Saturday's market around 4 p.m. Rob needs help pulling the plastic, if you can help contact Rob at 623 386 3033 or email tonopahrob@gmail.com .

As many of you already know, the farm fund-raiser dinner was a huge success and there were many a request for recipes from Chef Chris.  My absolute favorite dishes was the turnips and beets.  Below are the two recipes, enjoy…as did all of the dinner guests.

Turnips

— A mix of English and french turnips, tops and bottoms cut-off, then cut into bite sized pieces

— Olive oil

— Salt and pepper

— Fresh chopped parsley

1)  Blanch the turnips for 1 minute in boiling, salted water.  2) Shock the turnips in ice water until chilled.  3) Allow the turnips to drain and dry.  4) Heat a pan with olive oil until it begins to smoke lightly.  5) Add the turnips and cook until they start to brown as desired.  6) Season the turnips with salt and pepper, and add the chopped parsley.

Beets

— Beets, green trimmed from the top, and bottoms trimmed

— Salt and pepper

— Canola oil

— Citrus juice (orange, lemon, tangelo, grapefruit)

— Toasted walnuts

— Blue cheese, crumbled

1) Place the trimmed beets in a pot, add salt, and cover with cold water.  2) Bring to a simmer, and simmer gently until the beets start to feel soft.  3) While hot, cut the top and bottom off the beet, and then peel by rubbing off the skin with a paper towel.  IF cooked properly, the skin should fall right off.  4) Cut the beets into bite-sized pieces and allow to cool.  5) Mix the citrus juice, salt, pepper, and canola oil together to make a vinaigrette.  6) Toss the beets with the vinaigrette and add walnuts and blue cheese as desired.

An Easter Egg Sale- Non CSA item sale.  Eggs for this Saturday only are 4.00/dozen (regular sized eggs) saving $2.00 per dozen and $5.00/dozen for XL dozens saving $1.50 per dozen.

Also, Joe the Fish Man will be at the farm selling his Alaskan Salmon and Desert Pickin's will be there selling breads, pastries and more.  Tonopah Rob will not participate in any Sunday markets in observance of the Easter Holiday.
