Boil the water to a medium-strong boil in a sufficiently large saucepan. Once the water is boiling, gently immerse the cold (from the frige) eggs into the water with a spoon. Boil for 15 minutes (more or less). At the end of the 15, rapidly dump the water without dumping the eggs. Then play cold water over the eggs for 30 seconds to a minute, completely covering them. Next, drain the cold water, and set the eggs out on the counter to be peeled. Peel as soon as possible, without refrigerating the unpeeled eggs. --- Eggs are not the same. Some act differently than others. The most critical part of this process is the time that the eggs remain in the cold water after they are boiled. Test to see what works best for you.
