Ginger Snap Cookies (Recipe)

We acquired this recipe over 20 years ago from an auto detailing client we used to have; while Ernie was there detailing one of their cars (this was way back in the late '80's) and they brought out some of these Ginger Snap cookies and offered them as a snack. The cookies were so warm and gingery and soft that they quickly became one of Ernie's favorites, and they are a special treat that everyone looks forward to every Christmas. 

Ginger Snap Cookies

3/4 Cup Shortening

1 Cup Sugar

1 Egg

4 TBSP Molasses

2 Cups Flour

1/4 tsp. Salt

2 1/2 tsp. Baking Soda

1 tsp. Ginger

1 tsp. Cinnamon

Cream shortening, sugar, egg and molasses.
 
Sift together the flour, salt, soda, ginger, and cinnamon.
 
Add the flour mixture to the creamed mixture (slowly) until well blended.
 
 
 
Chill two hours.
 
Roll dough into 1" balls, roll dough balls into sugar, place on foil lined cookie sheet (this is important – I tried it once without using the foil, and they don't bake right).
 
 
 
Bake at 400 degrees F for 6-8 minutes.
